Hey yall I am here today with something a little different and that I haven’t done in a while. A nice little recipe for you all. As summer is approaching watermelon is always the best fruit for me to have because its just so fresh and has a wonderful taste and it just so good when its nice and cold. My kids love watermelon and I wanted a way to enhance this into a great side dish to a nice steak or something light for lunch so the adults can have in on the fun too.

I decided to use arugula because it taste so crisp and fresh, with a balsamic vinaigrette and all the extras, it was so good! As I said above this would be a perfect side dish to some nice marinated steaks or some veggie kabobs. IT is also really great all on its own. I might see what other recipes I can come up with the fruit of summer.

Adding all the ingredients for the vinaigrette into a mason jar, closed it and shook it all up together to make it easier for storage. I didn’t use all the dressing I made so I used it for a steak marinade and still had some left over for another salad. This summer I will be adding lots more recipes to the blog here and becoming more consistent. Cooking and making meals for myself and my family is what I love to do, mostly. Sometimes it is good to get a break, balance. Documenting more and sharing more here is my goal moving forward. Below I have shared the recipe for you all. Watermelon Arugula Salad
Ingredients
- 4 cups Fresh Arugula
- 2 cups Cubed Watermelon
- ½ cup Sliced Red Onions
- ¼ cup Feta Cheese
Balsamic Vinaigrette
- 3 Garlic Cloves Minced
- ¼ cup Balsamic Vinegar
- ½ cup Avocado Oil
- 1 tbsp Fresh Lemon Juice
- 2 tsp Honey
- 1 tsp Dijon Mustard
Instructions
- Gather all ingredients for vinaigrette and add to a masjon jar with lid and shake until all ingredients combined.
- Gather watermelon, arugula, feta, & red onions in large bowl.
- Slowly add your dressing about half and mix altogether. You will have dressing left over so no need to use it all.
- Add a pinch of salt and pepper and mix together once again and serve. You can serve alone or as a side dish.
